Whole30 Progress Report: The First Trimester

I wrote this little essay my first time doing a Whole30 in January 2014 when my eating habits are NOT what they are today. Although I tried to eat salads and forced down oatmeal and things of that nature, prior to Whole30 I was eating the Standard American Diet (SAD) that many of you may eat. To say Whole30 changed my entire way of thinking of food would be an understatement. This time around, Whole30 is not such a shock to my system as it is not very different from the way I normally eat, but I remember it being a MAJOR adjustment at the time. So, I decided to post this today, on Day 10 of my current Whole30, because I felt people could relate to it! Hope you enjoy :)

Poach a Chicken, Be a Meal Prep All Star

I’ll admit it—poached chicken probably sounds like the least exciting thing in the world. I mean, it used to be that when I heard “poached chicken,” I pictured some colorless, drab piece of meat that’s served to old people in sad nursing homes who no longer have taste buds or appetites. Seriously. But, Glow Getters, I was so wrong.

While poached chicken is probably not winning any “dish of the year” awards on its own, let me tell you: Poached. Chicken. Rocks. I get so excited about poaching my weekly/bi-weekly chicken because it’s the lifeblood of my meal prep. Let me explain. Basically, you toss a whole chicken in a pot with some water and vegetables for a little over an hour, and what comes out is the base of almost every dish you make that week. The Glow Getter Takes on Whole 30...are you up for the challenge?

I've started right away on my resolutions, hitting the gym running training for my first century bike ride in June (it's never too early to start!), planning my first big trip for April, and meditating regularly. All that's awesome, but since I'm here to keep it real with you, I'll tell you one area that hasn't been so great: my diet.

As a health coach, many people expect me to be perfect and on diet all the time, but the truth of the matter is, nobody's perfect. I don't even strive to be! After the holiday season, I could definitely use a "reset," if you will. For this, I turn to the Whole 30. This is my third year in a row starting the new year this way, and it really helps to get my cravings in check and get my body feeling healthy again. Sounds great, right? Let’s all do a Whole 30!
